Day 12 - Eggs Benedict

Heyyy!!  I still can't believe it…I'm a third of the way there - I'm almost at the halfway point of this crazy 31 Day Challenge!!  This time - I figured I would make a breakfast - I haven't made a breakfast yet - I've covered desserts and main dishes/appetizers…but I haven't yet covered the "most important meal of the day"…breakfast!

One morning, I was craving Eggs Benedict.  So that's exactly what I did.

There's really no "how-to" for Eggs Benedict…this recipe is out there…and it's doable.  As long as you know how to poach an egg, and make hollandaise sauce…you're good to go.

I can't tell you how to do either of those…there are better "how-to's" out there…so use this one for poached eggs, and this one for hollandaise sauce.  You'll thank me if you do it from scratch…just don't make Eggs Benedict every weekend - your cholesterol will go through the roof!!
